這些牛骨是從牛肉烧土豆的牛展那里切出來的.

Fergus, the man behind St. John restaurant in London, is wild about every part of the cow, especially those parts many people disregard. One of these overlooked treats is bone marrow, the luscious substance inside the leg bones, which Fergus has turned into his signature dish. When it's cooked, the marrow becomes an unctuous mass that you can scoop out and spread on toasted bread. Because the marrow is the main event, Fergus serves the roasted bones with a simply parsley salad, toast, and coarse sea salt.

8 3-inch-long center-cut beef or veal marrow bones, about 3 pounds

1 cup roughly chopped fresh parsley2 shallots, thinly sliced2 teaspoons capers1 tablespoon extra virgin olive oil2 teaspoons fresh lemon juiceCoarse sea salt to taste4 ½-inch-thick slices of crusty bread, toasted 
1.Soak the bones in cold, well-salted water for at least 12 hours and up to 2 days, changing the water several times. Pat them dry with a paper towel or cloth when you're ready to use them.
2.Preheat the oven to 450 F. Put the bones, cut side up, on a foil-lined baking sheet or ovenproof skillet. Cook until the marrow is soft and has begun to separate from the bone, about 15 minutes.
3.Meanwhile, prepare the parsley salad. Combine the parsley, shallots, and capers in a small bowl. Just before the bones are ready, whisk together the olive oil and lemon juice and drizzle the dressing over the parsley mixture until the leaves are just coated. Put the roasted bones, parsley salad, salt, and toast on a large plate and serve.

我第一次是在法國Leyon吃的,用來渣toast吃.
