很久沒有做咸魚蒸豬肉了,因公公說made the whole house smell, 所以返年回香港都冇買咸魚了,這些咸魚是幾年前買的,放在雪柜里面,拿出來是干了點,以經吃了,希望不會吃病.

咸魚蒸豬肉

材料: 梅頭豬肉 咸魚 薑 油

醃料: 生抽 鹽 豆粉 油

把豬肉醃好,咸魚洗干淨,放在豬肉上放薑片,再淋些油在成魚上,放在飯面上蒸. 飯熟豬肉也熟了.

 蕃茄炒牛肉

材料: 牛肉 蕃茄 鹽 糖 水 薑 油

醃料: 生抽 老抽 水 豆粉 油

牛肉醃好,熱鑊下油,薑,大火爆一下,把牛肉放下炒至半面,鏟起放在一旁,原鑊下蕃茄 鹽 糖 水煮至熟把牛肉放回鑊再炒幾下調味上碟.

Want to know the trick on how to make the beef tender.
people said to add water when marinating. some said put on more corn starch, etc. want to know the trick ... ... Thanks

BAKING SODA and water to marinate
beef over night. next day wash out the baking soda, before you cook put soy sauce, etc..to the beef use HOT HOT wok to cook the beef, it will be tender.
